HIBIKI || A Cocktail and Listening Lounge Pop-Up at Fairmont Hotel Vancouver

HIBIKI is a limited-time cocktail and listening lounge pop-up at Fairmont Hotel Vancouver, created in partnership with Beam Suntory.
Launching February 5, the experience brings together Japanese-inspired cuisine, elevated cocktails, and an intentional soundscape that places listening at the centre of the evening.
Named after the Japanese concept of hibiki, meaning resonance or echo, the pop-up invites guests to slow their pace and engage more deliberately. The space is intimate and considered, designed to support focused drinking, eating, and listening rather than background noise or spectacle.
Japanese spirits take the lead at HIBIKI.
The menu draws from classic Japanese preparations, executed with restraint and clarity. Dishes include Chicken Karaage with sansho pepper and sesame tare; Nasu Dengaku with roasted Japanese eggplant and sweet miso glaze; and Scallop Kobujime, featuring konbu-cured scallop crudo finished with yuzu kosho and lemon ponzu.
A crisp Toki Highball served simply.
At the bar, Japanese spirits lead the program. Cocktails include the clean, refreshing Toki Highball, the Roku Sour with matcha and yuzu, and the savoury Dirty Hakutini, made with Haku vodka and sake. Each drink is designed to sit comfortably alongside the music, not overpower it.
Sound is a defining element of HIBIKI. Weekly Suntory Sessions feature vinyl-forward DJ sets every Friday and Saturday from 7:00 p.m., with guest selectors including Kyprios, Vinyl Richie, Nick Bike, and Flipout. The programming leans soulful and eclectic, reinforcing the lounge’s measured, immersive atmosphere.

HIBIKI rethinks the cocktail lounge as a space for attention rather than excess—where music, drinks, and setting move together in quiet alignment.
